A yummy side dish
A salad without lettuce
Ready in a pinch.
Ingredients:
- 1 can white beans, rinsed and drained
- 1 Tbsp lemon juice
- 1 tsp coconut oil
- 1/4 cup minced red onion
- 1 small red, orange or yellow bell pepper, finely chopped
- 2 small tomatoes, finely chopped
- 1 small clove garlic, minced
- 1/4 cup finely chopped basil leaves
- freshly ground black pepper
- Toss all of the ingredients together in a medium bowl. Serve at room temperature, or chill to save for later!
