Can make a great meal
Ingredients:
- 1 cup of cooked white rice
- 1 apple (gala or fuji or the like), cubed
- 1/4 cup green olives with pimentos
- 1/2 cucumber, cubed
- 1 large tomato, cubed
- 1 avocado, peeled and cubed
- olive oil
- Add a bit of olive oil to the rice and stir. Chop and add the remaining ingredients.
- Enjoy! (This dish lasts in the fridge a couple of days, covered.)
